Ingredients
1 onion, peeled and chopped 25g (1 oz)
ghee or 2 tblsp oil 4 small green cardamoms 2.5cm (1 inch)
cinnamon stick 1 bayleaf 6 cloves 5ml (1 tsp) ginger
paste 5ml (1 tsp) garlic paste 450g (1 lb) lamb or beef
mince 5ml (1 tsp) chilli powder 10ml (2 tsp) ground
coriander 10ml (2 tsp) ground cumin 1.25ml ( ¼ tsp) turmeric
powder 150ml ( ¼ pint) natural yoghurt Salt to taste 1
bunch fresh methi leaves, stemmed and chopped or 15ml (1 tblsp) dry
kasuri methi leaves
Cooking Instructions
Fry onion in oil until just tender. Add cardamoms, cinnamon stick, bayleaf, cloves and fry for one minute. Add ginger and garlic pastes and cook for one minute. Add mince. Stir the mixture and sprinkle with chilli, coriander, cumin and turmeric. Mix well and cook for 5 minutes. Add well-stirred yoghurt and fresh methi leaves or dry methi. Cover and cook until the liquid is absorbed. Season with salt. Serve with chapati or rice.
